Drumstick Drumstick Pickle

Ingredients: 
Drumstick-3 to 5 numbers

Tamarind – less than a handful

Garlic – 8 numbers (chopped)

Dry red chillies – 5 numbers

Mustard seeds – 1/2 teaspoon

Cumin seeds – 1/2 teaspoon

Fenugreek seeds powder – 1/4 teaspoon

Red chilli powder – 1/4 cup

Turmeric powder – 1 teaspoon

Asafoetida / Hing – 1/2 teaspoon

Salt – as required

Oil – 1/2 cup

PREPARATION STEPS

  1. Soak tamarind in hot water for around fifteen minutes. Use a filter to extract the pulp and set this aside.
  2. Rinse and clean the drumsticks with water and dry it with a white cloth. Remove the end tips and cut them into one and a half-sized equal pieces.
  3. Heat a pan with four tablespoons of oil and fry the drumstick pieces only until it changes color. Remove them and keep them aside.
  4. Pour the remaining oil and roast mustard seeds, cumin seeds, dry red chillies, garlic and curry leaves for a couple of minutes.
  5. Add tamarind pulp, red chilli powder, turmeric powder, fenugreek powder, asafoetida and salt.
  6. Cook the contents until it thickens and add more oil if required.
  7. Finally, add the fried drumstick. Switch off the flame and give it a good mix.
  8. Transfer the contents to an airtight container or a jar. It tastes better if served after it has rested for a day or two.
